What according to you is a green meal? Amidst all the noise about weight loss, diets or food trends such as ‘clean eating’, a green diet sounds like another item to add to the list. But green eating actually means a healthy and sustainable diet that is good for us and the planet and it is a lot easier to follow than one might think. Green eating is not just a diet, it’s a way of life. Green eating is about making healthy, natural choices when it comes to the foods we eat along with choosing foods that are healthy for our planet. By switching our lifestyle to eating green, as often as possible, we’re saving our environment (and waistline) in more ways than one. The UN defines sustainable eating as ‘those diets that low environmental impacts which contribute to food and nutrition security, and to healthy life for present and future generations’. In other words, green eating isn’t just about following a healthy diet today – but ensuring that our children and grandchildren eat nutritious food too. Green foods are packed with nutrients and are an extremely important part of our diet. They are the healthiest and most filling choices one can make. There are numerous options to choose from and they can easily be incorporated into meals. Some popular green foods include spinach, broad beans, peas, cabbage and broccoli. Using a wide variety of these foods is the best way to ensure that we are consuming enough of them. |
What should be included in our green meal? Production of meat, dairy, and eggs uses massive amounts of natural resources. Animal-sourced food products are not sustainable to produce. Avoiding animal products is the top recommendation for eating a greener diet. Choose whole grains, fresh produce, nuts, and dried legumes, which result in less processing, less packaging, and better health. Make salad and home-made soups a big part of the diet. Eating more whole foods automatically reduces consumption of those foods that are difficult to digest. Mix it up by enjoying a wide variety of fresh fruits, vegetables, whole grains, and protein-rich legumes. Food colours represent different antioxidants and nutrient-composition. Avoid trans fats, high fructose corn syrup, artificial sweeteners, and other “junk” foods. Junk food is over- processed and devoid of nutrients. Choose healthy treats and minimize the “cheats” – your budget, your body, and your planet will thank you. Healthy, greener food choices include choosing quality over quantity. Eating less is a great way to save money and energy. By adopting healthy eating habits and appropriate portions, you can reduce health care costs too. One of the best ways that you can start eating greens is by purchasing as many items as possible that are locally grown. When food travels great distances, our air quality is reduced and pollution is increased. Choosing to buy from local farmers ensures, you will be eating fresher food which is easily available and cheaper too. |
What are your thoughts on encouraging people on consumption of green meals? According to me people must consume green meals as it is very essential for our growth. Green meals have folic acid which helps our body in producing and maintaining new cells. These green meals reduce the risk factor of cataract and muscular degeneration which is the main cause of blindness in the elderly. These have been found to reduce the risk of certain types of cancer. Considering the newer generation, we see that they are more likely to consume tasty food rather than eating healthy and so are also attracted to junk food. We should encourage them to eat healthy. Vegetables give us energy, vitamins, anti-oxidants, fiber and water. They help protect us against diseases, later in life. A healthy diet means eating lots of vegetables, plus a wide variety of foods from the other main food groups. |
How much do you find green meals important? Green meals are very important for the body. Green foods are beneficial for your heart and blood pressure. So, if you want a healthy body and mind, eat natural and green. Green foods are packed with antioxidants and nutrients that may specifically benefit your cardiovascular system. Some research suggests that eating dark leafy greens nearly every day could lower heart disease risk by almost 16%. Green vegetables are a very good source of iron. Iron is important in making red blood cells, which carry oxygen around the body, so it is important for teenagers to get enough iron, especially teenage girls who are at increased risk of iron deficiency anaemia. Many phytochemicals found in fruits, vegetables, nuts, and legumes act as antioxidants, including beta-carotene, lycopene, and vitamins A, C, and E. it is also found that a diet rich in vegetables, fruits, and fiber lowered the risk of colorectal cancer, while a diet rich in fiber reduces the risk of liver cancer. |

Interview By Siddhi Sanjay Deshmukh: Sophomore and Green Meal Promoter Brief information about the interview and our understanding towards it. According to her green meals is not just a diet but a way of life. It is a meal prepared sustainably and is low in carbon emission. Eating green meals also reduces the cost of packaging and transportation, which contributes twice as much carbon emission as in other processed foods. According to her eating greens is not just enough, eating greens and healthy is a must. She herself eats green meals and has already experienced the difference. It has boosted her metabolism made her feel happy, full and satisfied. |
Interview by Dr. Monali Butala Dietician and Doctor Brief information about the interview and our understanding towards it. She is a homeopathic consultant, dietician and also a nutritionist. According to her, green meal is a diet rich found in plants as well as ethically raised meat, chicken, fish and eggs. In her opinion, green meal is extremely important as it is a big source of anti-oxidants, low in calories, good source of phytonutrients and beneficial for the eyes. It is also rich in minerals, folates and is carb free. A green meal should include foods which are green, less processed, local and seasonal with no preservatives. On asking her the ways to increase the consumption of green meals, she suggested to encourage the younger generation to refrain from having fast food such as noodles and fries. In conclusion, she urged us to focus on a green and healthy diet filled with fruits and vegetables to avoid diseases and obesity. |
